I like to use whole courgettes but we also do it with leftover coring of koussa- you can also mix both. Use good quality pomegranate molasses and fresh garlic, dried mint and top with feta: yum!

Courgettes à la feta or لب الكوسة! This is definitely a dish that i didn’t like growing up but that i absolutely love now! I like to use whole courgettes but we also do it with leftover coring of koussa- you can also mix both. Use good quality pomegranate molasses and fresh garlic, dried mint and top with feta: yum!
Ingredients
- 7 pcs of Lebanese small marrows (koussa/courgettes) or any type you like
- Olive oil
- 1 large white onion, thinly sliced
- 8 small garlic cloves, minced and halved
- Pomegranate molasses to taste
- 1 tsp Dry mint
- 1/2 tsp Cumin
- 1/4 tsp paprika
- 100 grs good quality feta
- Salt
- Black pepper

Method
- 1)
Cut the courgettes into small cubes. You can also use or add the coring of courgettes.
- 2)
In a medium heavy based pot, drizzle some olive oil and add the onions.
- 3)
Sauté until fragrant and translucent. Add the garlic and the diced courgettes. Cook on medium fire until tender, gently stirring to avoid crushing the veggies.
- 4)
Take off the heat and add the spices, the dried mint and the pomegranate molasses. Stir then season with salt and black pepper.
- 5)
Crumble some feta on top.

Enjoy with arabic bread or as a side dish!
