Burghul Pilaf with Roasted Vegetables and Tahini Dressing

This meal is like a hug in food form! It’s so quick and easy to prepare and you can use any vegetables you prefer. During my collaboration with @jashanmal_uae, I used the @delonghiuae air fryer and it roasted the veggies super fast. Recipe below.

Roast Veggies Burghol Pilaf- with creamy tahini yogurt drizzle

Ingredients

  • 1 cup of rough burghol, boiled in 2 cups of water
  • 1 large onion, cubed medium
  • 2 medium aubergines, cubed medium
  • 2 medium zucchini, cubed medium
  • 1 can chickpeas, drained and rinsed (optional)
  • cumin seeds
  • cumin powder
  • dried chili flakes, (optional)
  • salt and pepper

For the tahini yogurt:

  • 2 cups of plain yogurt
  • 3 tbsp tahini
  • 1 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • a small garlic clove, crushed with salt
  • salt
  • a handful of chopped parsley

METHOD

  • 1)

    Place the prepared aubergine and zucchini in a bowl, drizzle with some olive oil, and season with salt, pepper and cumin seeds.

  • 2)

    Bake in an air fryer (or oven) until golden and tender.

  • 3)

    In a large pot, sauté the onion in some olive oil until fragrant and translucent.

  • 4)

    Add the chickpeas (if using), a teaspoon of cumin powder, ½ tsp chili flakes (if using) and 1tspn salt.

  • 5)

    Add the cooked burghol.

  • 6)

    Mix gently to coat with the seasoning.

  • 7)

    Season with salt and pepper to taste.

  • 8)

    Add more cumin if desired.

  • 9)

    For the yogurt, whisk all the ingredients together until smooth.

  • 10)

    Season with salt.

  • 11)

    In a serving plate, place the burghul then tip with the chargrilled veggies.

Notes

Drizzle the tahini on top and sprinkle some chopped parsley if you like.
