These are the most delicious, hot, chocolatey, bananas covered in crispy crunchy puff pastry. You can use any nut butter (i used almond butter) or use fresh raspberries instead with any chocolate or spread. Thank you Ryma for sending me the recipe, it’s delicious!

Ingredients

  • 2 firm but ripe bananas
  • 4 tsp nut butter
  • 4 tsp chocolate spread
  • puff pastry (about 100 grams)
  • 1 egg (for egg wash)
  • Demerara sugar (for sprinkling)
  • icing sugar (for sprinkling)

Method

  • 1)

    Preheat your oven to 180°C.

  • 2)

    Score and core some of the center of each banana.

  • 3)

    Fill each banana with 2 tsp of nut butter and 2 tsp of chocolate spread.

  • 4)

    Roll out puff pastry and cut into strips. Wrap each banana with the pastry strips.

  • 5)

    Place the wrapped bananas on a baking sheet.

  • 6)

    Beat the egg and brush the pastry with the egg wash for a golden finish.

  • 7)

    Sprinkle Demerara sugar over the top.

  • 8)

    Bake in the preheated oven for approximately 25 min or until the pastry is golden and puffed.

  • 9)

    Allow them to cool slightly, sprinkle some icing sugar if you like over the top before serving.
