Continue ReadingDate dhibs cookies, vanilla gelato and vanilla date dhibs. I was experimenting with some delicious, organic date dhibs that @bateelgourmet gifted me. The cookies didn’t come out exactly as I wanted. I was after chewy and moist but as I significantly tried to reduce the fat, they came out more like cake, like pain d’épices. So I thought to transform them into delicious ice cream sandwiches, more whoopie pies style using our favorite vanilla @canvas.gelato.
