Giant summer roll with poached chicken and Greek yogurt dressing. This is the perfect wrap for hot summer days! Super fresh and crispy, full of tangy flavors and filled with the super soft poached chicken breast.
Ingredients
for one giant wrap
- 2 large rice paper sheets Tepid water, for softening the rice paper
- 2 large iceberg
- lettuce leaves
- 1 poached chicken breast, shredded
- Pickled onions (recipe to follow)
- Extra iceberg lettuce, shredded
- 1/2 an avocado, sliced
- 1 spring onion, sliced
- Any other pickles you enjoy
For the dressing
- 2 tbsp Greek yogurt
- 2 tsp Dijon mustard
- 1-2 tsp mayonnaise
- 1 tsp pesto sauce
- Salt and freshly cracked black pepper, to taste
- Sriracha, to taste (optional)
Method
- 1)
Prepare the dressing by mixing together all the ingredients of the dressing. Season and keep aside.

Lightly wet the two rice paper sheets under running tap water for 1min, they will slowly soften. Lay them slightly overlapping on a clean work surface to create one large sheet.
- 3)
Place the two large iceberg lettuce leaves in the centre of the rice paper. Spoon over some of the dressing. Add the shredded poached chicken, pickled onions, avocado and spring onion slices, and a little extra shredded iceberg lettuce.
- 4)
Fold in the sides, then roll everything up tightly, enclosing both the lettuce leaves and the rice paper.
- 5)
Slice in half if desired and enjoy immediately.
