The ONLY condiment you need this summer! Quick pickled red onions with zaatar and pink peppercorns. YUMMMM!!!

My favorite ratio to remember:
1 : 1 : 1
1 part vinegar + 1 part hot water + 1 tbsp sweetener
+ 1 tsp salt.

The ONLY condiment you need this summer! Quick pickled red onions with zaatar and pink peppercorns. YUMMMM!!!

Ingredients

  • 1 medium red onion, thinly sliced
  • ½ cup apple vinegar
  • ½ cup hot water
  • 1 tbsp sugar
  • 1 tsp fine salt
  • A few whole pink peppercorns
  • 2 sprigs of fresh zaatar, roughly chopped

Method

  • 1)

    Place the sliced onion in a clean jar with all the ingredients.

  • 2)

    Close the lid tightly. Shake the jar until all the ingredients are well mixed and the sugar has dissolved, making sure the onions are fully submerged.

  • 3)

    Leave to pickle for 20 to 30 minutes before using.

  • 4)

    They’ll keep in the refrigerator for up to 2 weeks, and the flavor continues to develop over the first day.
