he easiest, silkiest and fluffiest buttercream. Perfect for frosting cakes and cupcakes. I added vanilla and a pinch of salt. How will you flavor it?

Ingredients

  • 500g butter, room temperature
  • 2 cups sifted icing sugar (300–350g)
  • 1–2 tsp vanilla essence (paste)
  • Pinch of salt

Method

  • 1)

    To achieve an extra fluffy and light buttercream, whip the butter alone on medium high speed for about 10 minutes or until it is double in size and paler in colour (using the whisk attachment in a stand alone mixer).

  • 2)

    Add the sugar in one go, start mixing slowly before mixing on medium high for another 5 minutes or until thick and smooth.

  • 3)

    Keep it well covered at room temperature and use it on the same day to frost your cooked and baked goods.
