Honey breakfast cookies, with oats and spices. Living in the moment is a great way to detach from the business of life and the messiness of our thoughts and just focus on the now- in this case these cookies! Super easy to make, with just a handful of ingredients that you probably have in your kitchen. My kids loved them as an afternoon snack and as a school cookie. They even took some extra for their friends!

Honey breakfast cookies, with oats and spices. Living in the moment is a great way to detach from the business of life and the messiness of our thoughts and just focus on the now- in this case these cookies! Super easy to make

Ingredients

  • 1/2 cup almond flour (50g)
  • 1/2 cup oat flour (or regular flour - 70g)
  • 1/2 cup oats (50g)
  • 3/4 tsp baking powder
  • 1/4 cup honey (45g)
  • 1/4 cup coconut oil (45g)
  • 1 tsp cinnamon powder
  • 1/3 tsp ginger powder
  • 1 tsp vanilla extract

Method

  • 1)

    Mix the dry ingredients then add the rest of the ingredients and mix well until a dough forms.

  • 2)

    Create small balls and flatten on a lined baking tray.

  • 3)

    Bake in preheated oven at 180°C for 10 min or until golden and crispy on the edges.

  • 4)

    Wait for a few minutes then carefully transfer to a cooling rack.

  • 5)

    Keep in an airtight container.
