Super easy to make, with just a handful of ingredients that you probably have in your kitchen. My kids loved them as an afternoon snack and as a school cookie. They even took some extra for their friends!

Ingredients
- 1/2 cup almond flour (50g)
- 1/2 cup oat flour (or regular flour - 70g)
- 1/2 cup oats (50g)
- 3/4 tsp baking powder
- 1/4 cup honey (45g)
- 1/4 cup coconut oil (45g)
- 1 tsp cinnamon powder
- 1/3 tsp ginger powder
- 1 tsp vanilla extract
Method
- 1)
Mix the dry ingredients then add the rest of the ingredients and mix well until a dough forms.
- 2)
Create small balls and flatten on a lined baking tray.
- 3)
Bake in preheated oven at 180°C for 10 min or until golden and crispy on the edges.
- 4)
Wait for a few minutes then carefully transfer to a cooling rack.
- 5)
Keep in an airtight container.
