Honey sweetened brownie muffins, the guilt free cure to any chocolate craving! Super easy to make with simple ingredients. Small tips: don’t over mix and don’t overbake!
Ingredients
- 1.5 cups almond flour
- 1/4 cup flour (oats for gluten free)
- 1 tbsp bran flour (optional)
- 1/2 cup unsweetened cocoa powder
- 1/2 cup chocolate chips (I used dark)
- 1/2 tsp baking soda
- 1/2 cup honey (or agave)
- 1/3 cup coconut oil
- 2 large eggs
- 1/4 cup milk (of choice)
- 1 tsp vanilla extract
- Peanut butter, optional
Method
- 1)
Preheat oven to 180°C
Grease a 12-hole baking muffin pan

In a large bowl, whisk the dry ingredients.
- 2)
In another medium bowl, whisk the eggs and the rest of the wet ingredients.
- 3)
Combine both and add the chocolate chips.
- 4)
Use a rubber spatula and DONT over mix.
- 5)
Fill the muffin tin with half the batter. Add dollops of peanut butter if using and top with the remaining batter.
- 6)
Bake in the preheated oven for 15 minutes. Remove from the oven, cook for a couple of minutes then transfer to a wire rack to cool.
