I came across this recipe on the gram and saw many different variations on the basic yogurt + flour combo. Ratios varied, flours different from gf to self raising to plain. After a couple of attempts, i found the ratio that worked best for me. And as i had vanilla yogurt at hand, i decided to roll these baby doughnuts in a mixture of sugar and cinnamon. I also stuffed them with Lotus (spéculos) spread. They were very crunchy on the outside, soft and pillowy on the inside. I cant wait to try this recipe with a savory variation!

Ingredients
- 1 cup plain flour
- 2 tsp baking powder, (Or 1 cup of self raising flour)
- 1/2 cup vanilla yogurt
- 2-3 tbsp granulated sugar
- 1-2 tsp cinnamon powder
- Lotus spread (optional)
METHOD
- 1)
Mix the flour with the yogurt.
- 2)
Sprinkle extra flour if the dough is sticky.
- 3)
Make little balls the size of large walnuts and roll in the sugar mixture.
- 4)
Bake in an air fryer at 180C for 10min or until crunchy and puffed.
- 5)
Remove the doughnuts from the air frier and wait until they are cool before filling them the lotus spread.
Notes
Simply poke a hole into the doughnuts and use a piping bag or any small bag and pipe some filling into each doughnut.
