Vanilla birthday cake, a recipe that should be in every household. I had posted it a long time ago but here it is again because I promise it’s wonderful. Frost it with whatever frosting you prefer, here I used cream cheese frosting (the recipe is in my IGTV). This cake will surely delight kids of all ages!

Vanilla birthday cake, a recipe that should be in every household. I had posted it a long time ago but here it is again because I promise it’s wonderful. Frost it with whatever frosting you prefer, here I used cream cheese frosting (the recipe is in an older IGTV). This cake will surely delight kids of all ages!
INGREDIENTS
- 225grs unsalted butter, softened
- 1,5 cups caster sugar
- 4 large eggs, room temp
- 1,5 cups plain flour, sifted
- 1,5 cups self-raising flour, sifted
- 1 cup of milk or buttermilk, (or milk with a squeeze of lemon)
- 2 tspn vanilla extract
METHOD

Preheat oven to 170C
- 2)
Butter and flour 2 x 8” cake tins
- 3)
With hand held or stand alone mixer, beat the butter until creamy.
- 4)
Gradually add the sugar, beating and scrapping the sides along the way, until light and fluffy.
- 5)
Add the eggs one by one, beating well in between each addition.
- 6)
Combine the 2 flours and fold them into the mix while alternating with the milk and by using a rubber spatula. Start with flour and finish with flour.
Of the batter looks lumpy or curdled, don’t worry it’s normal. - 7)
Do not be tempted to over-mix.
- 8)
Divide the batter between the 2 tins and bake for 30min or until golden and springy to the touch
- 9)
Insert a skewer to double check.
- 10)
Remove from oven, place on a cooling rack for 5min before inverting onto the rack to cool completely before frosting.
