INGREDIENTS
- 250g butter, softened
- 125g caster sugar
- 125g soft light brown sugar
- 4 large eggs, , room temp
- 200g self-raising flour
- 50g good-quality cocoa powder
- A pinch of salt
- 3 tbsp milk
- 1 tsp vanilla essence
- 100g dark chocolate, , coarsely chopped
METHOD

Preheat the oven to 180°C.

Grease and line a deep-sided baking tin, 20cm x 25cm or 25cm x 25cm

In the large bowl using a hand held mixer or in the bowl a stand alone mixer, beat the butter and both sugars together until light and fluffy, about 3-4min. Add the eggs, one by one, beating well after each addition.

The mixture will look curdled but don’t worry.
- 5)
Mix the flour, cocoa and salt, then sift over the egg mixture. Fold in using a large metal spoon or a rubber spatula.
- 6)
Beat until well combined then add the milk and stir. Fold in the chocolate chips.
- 7)
Don’t overmix.
- 8)
Pour into the prepared tin and level the top using the back of a spoon or a spatula.
- 9)
Bake for 25min (adjust according to the pan size) until a skewer inserted in the middle comes out clean.
- 10)
Cool on a wire rack for 10min then turn over to cool completely.
