Roast Veggies Burghol Pilaf- with creamy tahini yogurt drizzle
Ingredients
- 1 cup of rough burghol, boiled in 2 cups of water
- 1 large onion, cubed medium
- 2 medium aubergines, cubed medium
- 2 medium zucchini, cubed medium
- 1 can chickpeas, drained and rinsed (optional)
- cumin seeds
- cumin powder
- dried chili flakes, (optional)
- salt and pepper
For the tahini yogurt:
- 2 cups of plain yogurt
- 3 tbsp tahini
- 1 tbsp fresh lemon juice
- 1 tbsp extra virgin olive oil
- a small garlic clove, crushed with salt
- salt
- a handful of chopped parsley
METHOD
- 1)
Place the prepared aubergine and zucchini in a bowl, drizzle with some olive oil, and season with salt, pepper and cumin seeds.

Bake in an air fryer (or oven) until golden and tender.
- 3)
In a large pot, sauté the onion in some olive oil until fragrant and translucent.
- 4)
Add the chickpeas (if using), a teaspoon of cumin powder, ½ tsp chili flakes (if using) and 1tspn salt.
- 5)
Add the cooked burghol.
- 6)
Mix gently to coat with the seasoning.
- 7)
Season with salt and pepper to taste.
- 8)
Add more cumin if desired.
- 9)
For the yogurt, whisk all the ingredients together until smooth.
- 10)
Season with salt.
- 11)
In a serving plate, place the burghul then tip with the chargrilled veggies.
Notes
Drizzle the tahini on top and sprinkle some chopped parsley if you like.
