Ingredients
- 100 g unsalted French butter, softened
- 1 small shallot, chopped very small
- 1 garlic, crushed
- 3 anchovy fillets, crushed
- 1/2 lemon juice
- 1 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/4 tsp mild curry powder
- 1.5 tsp paprika
- 1 tsp salt
- 2 tsp sage (or tarragon) chopped finely
- 2 tsp parsley, chopped finely
Method
- 1)
Put the softened dairy butter along with the rest of the ingredients in a big glass bowl.
- 2)
Wear gloves and “knead” all of the Ingredients together to get a nice emulsified mixture.
- 3)
Using a rubber spatula (if possible), scrape onto a greaseproof paper and roll tightly into a log.
- 4)
Chill for 2 -3 days or freeze up to 2 months.
- 5)
Slice thinly and use on top of your favorite grilled meats and veggies.
