Sundried tomatoes and walnut dressing (vegan-or not) or how i transformed leftover ingredients from my fridge and pantry into a creamy, earthy, umami dressing.
Ingredients
- 6-8 pieces sundried tomatoes, soaked in boiling water (reserve 2 tbsp of the water)
- 1/4 cup walnuts
- 1/2 cup of coconut yogurt (for a vegan option) or thick yogurt like labneh or greek yogurt
- 1 tsp cumin seeds
- 1 tsp salt flakes (i used zaatar sea flakes by @mad.in.lebanon)
Method
- 1)
Blend the walnuts in a small food processor or spice grinder.
- 2)
Add the tomatoes, blend.
- 3)
Add some of the tomatoes soaking water and blend again.
- 4)
Add the cumin seeds, the salt and blend again.
- 5)
Make sure to scrape the sides with a small rubber spatula.
- 6)
Next transfer to a jar with a lid, add the yogurt and mix well.
- 7)
Serve on top of the salad of your choice.
