Creamy Mascarpone Chicken

Creamy mascarpone chicken- the quickest, most effortless dish that will make every one happy, including you!
I love this dish so much. Just remember to marinate your chicken then air fry it.

For the veggies and the stock, use whatever you have at hand. I felt the mushroom stock worked perfectly well with the pumpkin purée I had leftover in the fridge.
The mascarpone will create magic i promise!

Creamy mascarpone chicken- the quickest, most effortless dish that will make every one happy, including you!
I love this dish so much. Just remember to marinate your chicken then air fry it.

Ingredients

  • 500 g chicken breast, cut into cubes or strips
  • 1/2 tsp ginger powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp paprika
  • 1/4 tsp black pepper
  • 1 tsp salt (or to taste)
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 2-3 tbsp yogurt Juice of 1 lemon
  • 2 tbsp melted butter
  • 2 tbsp olive oil

For the creamy vegetables

  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 450 g mixed frozen vegetables
  • 2–3 tbsp pumpkin purée (optional)
  • 1 cup stock of your choice (mushroom, chicken, or vegetable)
  • 1 tsp dried oregano
  • 1 tsp dried herbs
  • Salt and pepper to taste
  • 1 tbsp butter
  • 1 tub (approx. 250 g) mascarpone cheese

Method

  • 1)

    Place everything in a ziplock bag and massage well with the chicken pieces.

  • 2)

    Leave to marinate at least 2 hours in advance (up to a day).

  • 3)

    Roast in the air fryer or in the oven for 10- 15 minutes or until cooked through.
    Keep aside.

  • 1)

    In a deep skillet, melt 1 tbsp of butter.

  • 2)

    Add the chopped onion and garlic and sauté until fragrant.

  • 3)

    Add the pumpkin purée (if using) and mix well, then add the frozen vegetables and stir to combine.

  • 4)

    Pour in the stock, season with oregano, salt, and pepper, and cover. Let it simmer for about 8–10 minutes until the vegetables are tender.

  • 5)

    Stir in the mascarpone cheese until smooth and creamy. Return the chicken to the skillet and mix everything together.

  • 6)

    Simmer for another 5 minutes on low heat to let the flavors blend.

  • 7)

    Serve hot with rice or pasta on the side.
