Labneh, zaatar and egg. Self explanatory brunch toastie that also reflects my state of mind! Simplicity at its best!
Ingredients
- 1 slice of toasted bread
- Labneh
- zaatar mix (I love @thegoodthymes)
- olive oil (any good Lebanese evoo l)
- ripe tomatoes
- organic cucumbers
- boiled egg
- Lebanese or Syrian green olives pitted
- fresh mint leaves (optional)
- A bit of salt and pepper- if you like.
Method
- 1)
In a small bowl, mix zaatar and olive oil.
- 2)
Spread the Labneh on the toasted bread. Swirl some zaatar mix on top.
- 3)
Decorate with some slices of tomatoes, cucumber and putter olives. Use fresh mint leaves.
- 4)
Slice the egg and place on top.
- 5)
Drizzle some olive oil and season with salt and pepper.
