Lebanese moms’ garlic yogurt and pasta, a bowl of pure childhood nostalgia. My mom used to make this garlic-yogurt pasta with minced meat and pine nuts, and we always thought it was a special treat for us. Now, as a mom myself, I realise it was her treat to herself, something simple, delicious, and comforting on the days she was too tired for anything more complicated.
Hot pasta, cold garlicky yogurt, warm beef, crunchy pine nuts… still one of my favourite quick dinners- that my kids still think is a treat!

Lebanese moms’ garlic yogurt and pasta, a bowl of pure childhood nostalgia. My mom used to make this garlic-yogurt pasta with minced meat and pine nuts, and we always thought it was a special treat for us. Now, as a mom myself, I realise it was her treat to herself, something simple, delicious, and comforting on the days she was too tired for anything more complicated.

Ingredients

  • 250 g pasta of choice
  • 1 cup plain yogurt
  • 1 garlic clove, crushed
  • Salt, to taste
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 200–250 g minced beef
  • 1 tsp seven spices (or allspice/mixed spice)
  • Salt & pepper, to taste
  • 2 tbsp pine nuts
  • Extra olive oil for frying

Method

  • 1)

    Boil pasta in salted water until al dente.

  • 2)

    In a bowl, mix the yogurt with crushed garlic and a pinch of salt. Set aside.

  • 3)

    In a pan, heat 1 tbsp olive oil, sauté the onion until soft, then add the minced beef. Season with seven spices, salt, and pepper. Cook until browned.

  • 4)

    In a small pan, warm a splash of olive oil and fry the pine nuts until golden.

  • 5)

    Drain the pasta and place in a serving bowl. Add the cold garlic yogurt, spoon the hot beef on top, and finish with the crunchy pine nuts and a drizzle of their oil.

  • 6)

    Serve immediately while the pasta is hot, top with the cold yogurt, the warm meat and the crunchy nuts.
