Nectarine and avocado salsa is a super refreshing and colourful side dish, delicious with grilled meats and fish. I initially wanted an avocado and mango salsa but instead used whatever ingredients I had at hand to create this dish. I tasted nectarines in a salad at my friend @eatlikenicole this summer, and it feels like sunshine whenever I use it. Add whatever herbs you have, coriander, mint or maybe a combination of both!

Nectarine and avocado salsa is a super refreshing and colorful side dish, delicious with grilled meats and fish. I initially wanted an avocado and mango salsa but instead used whatever ingredients i had at hand to create this dish. I tasted nectarines in a salad at my friend @eatlikenicole this summer and it feels like sunshine whenever i use it. Add whatever herbs you have, coriander, mint or maybe a combination of both!
INGREDIENTS
- 1 avocado, diced
- 1 nectarine,, diced
- 1/2 onion, diced
- 2 limes, squeezed
- 1/2 tsp chili , I used chili jam- you can use fresh chilies or chili flakes
- 1/2 tsp agave syrup
- A handful of mint leaves, chopped in chiffonnade
- Olive oil, to taste
- Salt, to taste
METHOD
- 1)
In a bowl, mix the nectarine with the avocado and the lime juice.
- 2)
Make sure the avocado is well coated with the lime juice.
- 3)
Add the remainder of the ingredients and mix well.
- 4)
Season with salt and chili according to your preference.
- 5)
Serve immediately with grilled meats and fish.
Notes
If needed, you can cover with cling film and refrigerate for later but make sure the film touches the salsa to avoid oxidization of the avocado.
