In this lazy cake recipe, I tweaked an older one (by my friend @joellerached) and I cannot tell you how amazing it turned out!! I used whatever biscuits I could find at home, starting with digestives (a must in my opinion) and added some butter biscuits and pretzels. The saltiness of the pretzels was such a nice contrast to the sweetness of the chocolate. Also I added some malt powder (my friend @sandyskitchen’s genius idea!!) and it took this lazy cake to a different dimension. What i love about this type of desserts is that you can forget it in the freezer and just whip it out last minute when the neighbors show up- or your cravings hit!! (Make sure to double wrap in aluminum foil to avoid freezer taste).

Ingredients

  • 200 grs unsalted butter, melted
  • 350 grs of digestive biscuits
  • 150 grs of salted pretzels
  • 395 grs of sweet condensed milk
  • 6 tbsp of cocoa powder, sifted
  • 3 tbsp of ovaltine powder, sifted (malt powder)- optional!

Method

  • 1)

    Place the biscuits and pretzels in a zip lock bag, and crush them with a rolling pin to get small to medium chunks of crumbs.

  • 2)

    In a medium bowl, mix the butter, cocoa and malt powder and the sweetened condensed milk.

  • 3)

    Pour over the crushed biscuits and mix well until everything is properly combined.

  • 4)

    Roll into 2 logs and wrap in aluminum foil. Keep in the freezer for a minimum of 3 hours before slicing and serving straight from the freezer.
