Summer Rolls with Peanuts Tahini Dip

Summer rolls are a favorite dish at home! They’re so easy to make, so colorful, crunchy and bursting with flavors!
INGREDIENTS
The essentials:
- fresh coriander leaves
- fresh basil leaves
- shredded spring onions
- 1/4cup a bit of cashew butter
- 100grs boiled and drained thin, brown rice noddles (make sure they are dry, [I find its better to salt the noodles so that the vegetables stay nice and crispy]
- 2 packs 400grs rice paper disks
The other ingredients I used are:
- sliced avocados
- julienned carrots
- finely shredded purple cabbage
- sweet peppers in all colors
- julienned courgettes
For the tahini peanut sauce, mix and shake in a jar:
- 2tbsp crunchy peanut butter
- 1 tsp sesame oil
- 2tbsp soya sauce
- 1/4 cup tahini
- 1/4 cup water
- a handful chopped peanuts
METHOD
- 1)
Start with shredding/ julienning the veggies.
- 2)
Use a maximum of contrasting colors and crunchy textures.
- 3)
Prepare all the ingredients at hand’s reach, a tea towel right in front of you, a big and shallow bowl of hot water on one side and a pile of round, dry, rice papers.
- 4)
Place delicately the rice paper in the boiling water for a few seconds, lift gently and place on top of the kitchen towel. Remove excess water (if any) from the top and spread with a bit of cashew butter in the center vertically.
- 5)
Start layering a bit of all the veggies vertically on top of the cashew butter starting with the essentials then topping with the rest until you have a nice generous pile.
- 6)
Roll from one side, making sure to roll the veggies in the rice paper as tight as you can (without breaking it!!) because I feel they tend to loosen a bit.
Notes
I like to leave the edges loose, but feel free to fold them midway while rolling!!
Sprinkle with black sesame and serve with the tahini peanut sauce.
