Continue ReadingWhat I love about this salad is that I always have the ingredients at home. Also, 2 extra steps in the preparation take it to another level: the crushing of the cucumbers (it allows the dressing to seep into and onto every side and crack of the cucumbers) AND the salting of the cucumbers (to release extra water and make them crunchier).I have made it twice in the past week and the dressing keeps nicely in the jar in the fridge ready to satisfy any cucumber salad craving!

On busy and hectic mornings, I have just realised that I can have boiled eggs on the go but a protein smoothie could be a bit more pleasant!Made this one with frozen blueberries and powdered peanut butter- the best of both worlds for a delicious and satisfying dupe peanut butter and jelly flavor in a protein smoothie.I use unflavored organic protein powder and the best almond milk (least ingredients) possible.Would you try this?Ps: the color is 100% natural
