Fresh Brussels sprouts from SpinneysFOOD are one of my favourite seasonal vegetables this time of year. They make the easiest salad, perfect for preparing ahead and serving at bigger gatherings. The finely sliced sprouts stay crisp, the lemony vinaigrette brightens everything, and the sweet chewy dates bring it all together. The topping of crispy pine nuts and cumin seeds brings the whole salad to life. Finish with plenty of finely grated pecorino Romano, added right before serving – the more the better. So I went back into into my camera roll and found this simple salad I made last year while on holiday in France. Nothing makes me happier than fruits and vegetable markets! It’s super simple, just make sure not to over cook the beans and put them in icy water to retain their green vibrancy and their crunch.

Continue ReadingCan we all agree that not all trends are created equal? Some are actually useful and delicious_ such as this crispy rice! Transform any salad into a crunchy, exciting one simply by upscaling your leftover rice into little crispy, flavorful bites. I used nutritional yeast to add benefits and umami flavors (and because I had some at home!!). Otherwise all you need is some olive oil, dried herbs and an oven or air fryer. A great way to use your leftover rice.
