Continue ReadingHi guys! On my last trip to Lebanon, i tried the most delicious kibbeh at a restaurant called Joulia. The owner Jad is from the north and this 1 layer kibbeh (mamdoudeh or spread kibbeh) is a specialty from the region. The topping reminded me of the famous pissaladière tart. I decorated it with microgreens and pomegranate to create a contrast in flavor and in color.

Continue ReadingHalloumi and fresh zaatar bake. This looks like a salad, and you can have it as one, but when you bake it, it gets transformed into so much more! The caramelized tomatoes, the warm halloumi, the earthy zaatar and the juices make it the ideal warm salad to have with arabic (flat) bread. Yum!
