Continue ReadingI just love meals that can be prepped well in advance, like this kafta and potatoes bake, with a tangy tahini sauce. The twist is the addition of cauliflower- as my friend @chefsallyjane does. It’s such a delicious way to have this dish a bit lighter. Make sure to have the kafta balls at the bottom of the dish so they soak up all the yummy juices.

My mom used to make this garlic-yogurt pasta with minced meat and pine nuts, and we always thought it was a special treat for us. Now, as a mom myself, I realise it was her treat to herself, something simple, delicious, and comforting on the days she was too tired for anything more complicated.Hot pasta, cold garlicky yogurt, warm beef, crunchy pine nuts… still one of my favourite quick dinners- that my kids still think is a treat! Serves 3–4

They are naturally dairy free, gf, refined sugar free and full of flavor! Keep them in the fridge for the ultimate indulgence. I usually add cinnamon and orange zest to them, feel free to play around the recipe. Enjoy!
