    I love desserts that look impressive but that are easy to prepare in advance. These ruby-like poached pears and spiced whipped cream look luscious and taste delicious- just make sure to use Bartlett pears as they are super juicy and they retain their shape while poached.The whipped cream is made with mascarpone for richness and cardamom and vanilla for warm spice. I used a non-alcoholic wine simmered with star anise and vanilla then reduced it to create a velvety syrup.I love using USA pears in desserts as they are so flavorful, versatile, contain little calories and have so much sweetness…

    Double chocolate tart- and a little festive truth:not everything you see is always the full picture!This tart has a cracked crust. It tasted amazing- and with good ingredients, even mistakes can be fixed.     To be honest, the is the truest of true crumbles minus the butter, the flour and the sugar. Instead I made it using maple syrup, oat flakes and bran, some almond flour and super ripe and juicy fruits. I got inspired when I found some super ripe peaches peaches in the fridge and mixed berries in the freezer. Berries always turn into a gooey red coulis and transform any crumble into heaven.
