The toppings, although optional, add freshness and cut through the milkiness while the pistachios add crunch. Wish you all peace and safety

  • Poached Bartlett Pears with Spiced Cream

Poached Bartlett Pears with Spiced Cream

    January 2, 2026pub

I love desserts that look impressive but that are easy to prepare in advance. These ruby-like poached pears and spiced whipped cream look luscious and taste delicious- just make sure to use Bartlett pears as they are super juicy and they retain their shape while poached. The whipped cream is made with mascarpone for richness and cardamom and vanilla for warm spice. I used a non-alcoholic wine simmered with star anise and vanilla then reduced it to create a velvety syrup.I love using USA pears in desserts as they are so flavorful, versatile, contain little calories and have so much sweetness…

Mousse au Chocolat with RS Extra Virgin Olive Oil

    November 6, 2025pub

I have been wanting to try the combination of a rich yet light dark chocolate mousse with olive oil but I didn’t know which one to use. When I tasted the extra virgin olive oil from Rafael Salgado @aceitesrafaelsalgado, with its rich, fruity flavor, its perfect balance of velvety and acidic finish, i knew that was the perfect oil to use for this recipe. Rafael Salgado oils are a family run business, producing olive oil since 1875. That is 150 years of Spanish olive oil perfection from Spain to your home. Distributed by @lifcointl

  • Fake Peaches and Berries Crumble

    Fake Peaches and Berries Crumble

    June 24, 2025pub

To be honest, the is the truest of true crumbles minus the butter, the flour and the sugar. Instead I made it using maple syrup, oat flakes and bran, some almond flour and super ripe and juicy fruits. I got inspired when I found some super ripe peaches peaches in the fridge and mixed berries in the freezer. Berries always turn into a gooey red coulis and transform any crumble into heaven.

Once you try this crème pâtissière légère (or light pastry cream), you’ll understand my obsession with making it. It’s super easy to make and the result is a velvety, custardy whipped cream studded with vanilla specs. For this tart, I used a gluten free ready made shortcrust dough (pâte brisée), half a jar of lemon curd that I spread under the cream and some berries.
